Pineapple Cake

Pineapple is a rich source of Vitamin C, calcium, Potassium & fibre. It can make your bones stronger. It a good remedy for cold & cough. It helps to digest other foods. This great source of Vitamin C  protects your body from being damaged from free radicals that attack healthy cells. To remove intestinal worm pineapple is beneficial. It is also useful in controling your blood pressure level. Pineapple has been recommended as a great remedy for rheumatoid arthritis. Pineapple can give some relief from painful periods (for women). It helps to retain your healthy eye and provide an excellent protection from age associated eye problems.


Ingredients:
Pineapple (sliced)- 1 -8 ounce can
Butter- 3 tbsp
Sugar (brown)- ½ cup
Cherries (maraschine)- 4 cut into halved
Shortening- 1/3 cup
Vanilla- 1 tsp
Sugar- ½ cup
Salt- A pinch
Egg- 1
Flour- 1 cup
Baking powder- 1-1 ½ tsp
Whipped cream- 1 cup (optional)

Direction:
Soak pineapple pieces in water. Drain the water & reserve it for syrup. Add a little bit of water to make it almost ½ cup.
Take a 9″ square pan & melt butter in the pan. Pour brown sugar & stir well to mix properly.
Dispose the sliced pineapples in the bottom of the pan.
Put halved cherry in the middle of the pineapple pieces.
Now in another bowl mix together white sugar & shortening. Stir well.
Add vanilla & eggs. Beat the mixture properly until it gets foamy.
Pour pineapple syrup & beat again. Pour the mixture in the pan.
Now at 350 degree F preheat the baking oven.
Bake it for almost 40-45 minutes. Remove it from the baking oven & cool it for about 10-15 minutes.
Garnish the top with a blob of whipped cream & serve.
